2 tablespoons olive oil
1 medium onion, diced
3 cloves garlic, minced
1 tablespoon grated fresh ginger
2 teaspoons curry powder
4 cups vegetable broth
4 cups cubed butternut squash
1 cup coconut milk
1 teaspoon salt
1/2 teaspoon freshly ground black pepper

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat. Add the onion, garlic, and ginger and cook until the onion is translucent, about 5 minutes.

Stir in the curry powder and cook for 1 minute until fragrant.
