Tomato and Spinach Curry

Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon garam masala
  • 1 teaspoon ground ginger
  • 2 cups diced tomatoes
  • 2 cups vegetable broth
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1 (15-ounce) can light coconut milk
  • 1 (10-ounce) package frozen chopped spinach, thawed and drained
  • Salt and pepper, to taste

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  • Step 2
    Stir in the cumin, coriander, turmeric, garam masala, and ginger. Cook for 1-2 minutes, until fragrant.
  • Step 3
    Add the tomatoes, vegetable broth, chickpeas, and coconut milk to the skillet. Bring the mixture to a simmer and cook for 10-15 minutes, until the sauce has thickened and the flavors have melded together.
  • Step 4
    Stir in the spinach and season with salt and pepper, to taste. Cook for an additional 5 minutes, until the spinach is heated through.
