Shrimp Tempura Roll Sushi

Shrimp tempura roll sushi is a classic type of sushi roll that is very popular in Japan and around the world. It consists of cooked shrimp tempura, which is lightly battered and fried, and then wrapped in sushi rice and nori (seaweed paper). The combination of the crunchy tempura shrimp and the soft sushi rice is what makes this type of sushi so delicious. It is usually served with a soy dipping sauce or Japanese mayonnaise.

Ingredients (2 Persons)

  • 1 pound uncooked shrimp, peeled and deveined
  • 1/2 cup tempura batter mix
  • 4 cups vegetable oil for frying
  • 4 cups cooked sushi rice
  • 4 sheets nori (seaweed)
  • 1 avocado, sliced
  • 1 cucumber, sliced

Directions

  • Step 1
    Heat the oil in a large skillet over medium-high heat. Add the shrimp to the tempura batter and mix until all the shrimp are coated. Carefully drop the batter-coated shrimp into the hot oil and fry for 1-2 minutes, until golden brown and crispy.
  • Step 2
    Place a sheet of nori on a sushi mat and spread 1 cup of cooked sushi rice over the nori. Arrange the fried shrimp, avocado, and cucumber over the rice.
  • Step 3
    Starting at the end with the shrimp, roll the sushi mat and nori over the filling, tucking and rolling as you go. Use the sushi mat to help shape the roll.
  • Step 4
    Use a sharp knife to cut the roll into 8 pieces. Serve with soy sauce and wasabi, if desired.
