Vegan Butternut Squash Curry

Vegan Butternut Squash Curry is a hearty and flavorful dish that is perfect for any dinner. Ingredients (2 Persons)

  • 1 large butternut squash, peeled and cut into cubes
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon chili flakes (optional)
  • 1 (14-ounce) can full-fat coconut milk
  • 1 (14-ounce) can diced tomatoes, with juices
  • 1 (14-ounce) can chickpeas, drained and rinsed
  • 1/2 cup vegetable broth
  • salt and pepper, to taste
  • 1/4 cup freshly chopped cilantro, for garnish

Directions

  • Step 1
    Heat the olive oil in a large skillet or pot over medium heat. Add the onion and cook, stirring often, until softened and lightly browned, about 5 minutes.
  • Step 2
    Add the garlic, ginger, coriander, cumin, turmeric, cardamom, cinnamon, cloves, and chili flakes (if using). Cook, stirring, for 1 minute.
  • Step 3
    Add the butternut squash, coconut milk, diced tomatoes, chickpeas, and vegetable broth. Stir to combine.
  • Step 4
    Bring the mixture to a simmer and cook, stirring occasionally, until the squash is tender, about 15 minutes.
  • Step 5
    Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
