Malaysian Chicken Curry

Ingredients (2 Persons)

  • 4 boneless, skinless chicken breasts, cubed
  • 2 tablespoons oil
  • 2 tablespoons curry powder
  • 1 (14.5 ounce) can coconut milk
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt

Directions

  • Step 1
    Heat the oil in a large skillet over medium heat. Add the chicken cubes and cook until lightly browned, about 5 minutes.
  • Step 2
    Stir in the curry powder, coconut milk, onion, bell peppers, garlic powder, ginger, paprika, cumin, coriander, turmeric, red pepper flakes, and salt.
  • Step 3
    Bring the mixture to a boil, then reduce the heat and simmer until the chicken is cooked through and the sauce has thickened, about 15 minutes.
  • Step 4
    Serve over cooked rice, if desired.
