Cauliflower and Chickpea Curry

Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh grated ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1/2 teaspoon ground turmeric
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon red pepper flakes
  • 1 head cauliflower, cut into florets
  • 1 can chickpeas, drained and rinsed
  • 1 can diced tomatoes
  • 1/2 cup vegetable broth
  • 1/4 cup chopped fresh cilantro (for garnish)

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Add the garlic, ginger, cumin, coriander, garam masala, turmeric, salt, pepper, and red pepper flakes. Cook for 1 minute, stirring frequently, until fragrant.
  • Step 3
    Add the cauliflower, chickpeas, tomatoes, and vegetable broth. Stir to combine and bring the mixture to a simmer.
  • Step 4
    Cover the skillet and reduce the heat to low. Simmer for 20-25 minutes, stirring occasionally, until the cauliflower is tender.
  • Step 5
    Serve the curry with fresh cilantro and a side of basmati rice or naan bread.
