Butternut Squash Curry

Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons freshly grated ginger
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon cayenne pepper, (optional)
  • 4 cups butternut squash, cubed
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (14-ounce) can light coconut milk
  • 1/4 cup chopped fresh cilantro, for garnish

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
  • Step 2
    Stir in the ginger, coriander, cumin, turmeric, cinnamon, cardamom, cloves, and cayenne pepper (if using). Cook for 1-2 minutes, until the spices are fragrant.
  • Step 3
    Add the butternut squash to the skillet and stir to coat in the spices. Pour in the diced tomatoes and coconut milk and bring the mixture to a simmer.
  • Step 4
    Cover the skillet and cook for 15-20 minutes, until the butternut squash is tender. Serve the curry garnished with fresh cilantro.
