Curried Lentil Soup

Ingredients (2 Persons)

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 3 cups vegetable broth
  • 1 cup dry lentils, rinsed and drained
  • 2 cups diced tomatoes
  • 1 cup coconut milk
  • 2 tablespoons freshly squeezed lemon juice
  • Salt and freshly ground black pepper, to taste

Directions

  • Step 1
    Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  • Step 2
    Stir in the ginger, curry powder, and cumin and cook for 1 minute more, until fragrant.
  • Step 3
    Add the vegetable broth and lentils and bring the mixture to a boil. Reduce the heat to low, cover the pan, and simmer for 15-20 minutes, until the lentils are tender.
  • Step 4
    Stir in the tomatoes, coconut milk, and lemon juice, and season with salt and pepper. Simmer for 10 minutes more, until the flavors have melded together.
