Lamb Curry

Lamb Curry is a hearty and flavorful dish made with lamb, a variety of spices, and other ingredients such as ginger, garlic, onion, and tomatoes. Ingredients (2 Persons)

  • 1 tablespoon olive oil
  • 2 pounds ground lamb
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons curry powder
  • 1 tablespoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground ginger
  • 1 14.5 ounce can diced tomatoes, with juices
  • 1 14.5 ounce can coconut milk
  • 1/2 cup plain yogurt
  • 2 tablespoons tomato paste
  • 1/4 cup chopped fresh cilantro leaves

Directions

  • Step 1
    Heat olive oil in a large skillet over medium-high heat. Add the ground lamb and cook until it is no longer pink, breaking it up into small pieces as it cooks.
  • Step 2
    Add the onion and garlic and cook until the onion is softened, about 5 minutes.
  • Step 3
    Stir in the curry powder, garam masala, cumin, turmeric, and ginger. Cook for 1-2 minutes, until the spices are fragrant.
  • Step 4
    Stir in the diced tomatoes, coconut milk, yogurt, and tomato paste. Bring the mixture to a simmer and cook for 10 minutes, until the sauce has thickened and the flavors have melded together.
  • Step 5
    Stir in the cilantro and serve with rice or naan bread.
