Thai Red Curry with Vegetables

- 1 bell pepper, diced
- 1 small zucchini, diced
- 1 cup sliced mushrooms
- 1 cup baby corn, cut into thirds
- 1/2 cup frozen green peas
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon lime juice
- 1/4 cup chopped fresh cilantro
Directions

Heat the oil in a large skillet over medium-high heat. Add the onion and cook until softened, about 3 minutes.
