Cauliflower and Coconut Curry

Ingredients (2 Persons)

  • 1 head of cauliflower, cut into florets
  • 1 can of coconut milk
  • 1 tablespoon of curry powder
  • 1 teaspoon of turmeric
  • 1 teaspoon of ground ginger
  • 1 teaspoon of cumin
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 cup of frozen peas
  • Salt and pepper to taste

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium heat. Add the garlic, onion, and bell pepper and cook for 5 minutes, stirring occasionally.
  • Step 2
    Add the cauliflower, curry powder, turmeric, ginger, cumin, and a pinch of salt and pepper. Stir to combine and cook for 5 minutes.
  • Step 3
    Add the coconut milk and bring the mixture to a simmer. Simmer for 10-15 minutes, until the cauliflower is tender.
  • Step 4
    Stir in the frozen peas and cook for a few minutes until they are heated through.
  • Step 5
    Taste and adjust seasonings as desired. Serve over rice or quinoa.
