Easy Eggplant Curry

Easy Eggplant Curry is a delicious and flavorful Indian dish that is perfect for busy weeknights. This dish is made with eggplant, tomatoes, spices, and coconut milk for a creamy and flavorful sauce. The eggplant is cooked until it is tender and the spices bring out the flavor of the eggplant. This curry is easy to make and can be served with rice or naan bread for a complete meal.

Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 teaspoons cumin
  • 2 teaspoons coriander
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 large eggplant, diced into 1-inch cubes
  • 1 large tomato, diced
  • 1 can (14.5 ounces) coconut milk
  • 1/3 cup fresh cilantro, chopped (for garnish)

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until the onion is softened and translucent, about 5 minutes.
  • Step 2
    Add the ginger, cumin, coriander, turmeric, garam masala, and cayenne pepper (if using) to the skillet and cook for 1-2 minutes, until the spices are fragrant.
  • Step 3
    Add the eggplant and tomato to the skillet and cook for 5 minutes, stirring occasionally.
  • Step 4
    Pour the coconut milk into the skillet and bring the mixture to a simmer. Cover the skillet and cook for 10-15 minutes, until the eggplant is tender.
  • Step 5
    Garnish with the cilantro and serve warm over cooked rice or quinoa.
