Chicken and Sweet Potato Curry

Ingredients (2 Persons)

  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons curry powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/4 teaspoon salt
  • 1/2 teaspoon turmeric
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (14.5 ounce) can coconut milk
  • 2 large sweet potatoes, peeled and cubed
  • 1 cup cooked chicken, shredded

Directions

  • Step 1
    Heat olive oil in a large skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  • Step 2
    Stir in curry powder, ginger, cumin, cinnamon, pepper, cayenne, salt and turmeric. Cook and stir for 1 minute.
  • Step 3
    Pour in diced tomatoes and coconut milk. Add sweet potatoes and stir until everything is evenly combined.
  • Step 4
    Bring mixture to a simmer and reduce the heat to low. Simmer, stirring occasionally, for 15 minutes or until sweet potatoes are tender.
  • Step 5
    Stir in chicken and cook for an additional 5 minutes, until the chicken is heated through.
