Miso Soup with Sushi

Ingredients (2 Persons)

  • 4 cups dashi
  • 2 tablespoons white miso paste
  • 2 tablespoons red miso paste
  • 1/2 cup diced carrots
  • 1/2 cup diced daikon radish
  • 1/2 cup diced shiitake mushrooms
  • 2 tablespoons soy sauce
  • 2 tablespoons mirin
  • 4 cups cooked sushi rice

Directions

  • Step 1
    In a large pot, bring the dashi to a boil. Reduce heat to low and add the miso paste, stirring until dissolved.
  • Step 2
    Add the carrots, daikon, mushrooms, soy sauce, and mirin to the pot. Simmer for 10 minutes.
  • Step 3
    Add the cooked sushi rice to the pot and simmer for 5 minutes more.
  • Step 4
    Ladle the miso soup into bowls and serve. Enjoy!
