Vegan Red Curry

Vegan Red Curry is a savory and spicy Thai-style curry dish made with a variety of ingredients, including coconut milk, red curry paste, and vegetables. The dish is typically served over jasmine rice and garnished with fresh cilantro and lime wedges. It can be made with tofu, tempeh, vegan mock meats, or simply vegetables for a delicious and nutritious vegan meal.

Ingredients (2 Persons)

  • 1 tablespoon coconut oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon red curry paste
  • 1 (14-ounce) can coconut milk
  • 1 bell pepper, diced
  • 1 cup broccoli florets
  • 1 cup baby corn
  • 1/2 cup green beans
  • 1/2 cup snow peas
  • 1/2 cup bamboo shoots
  • 2 tablespoons tamari or soy sauce
  • 1 tablespoon coconut sugar or brown sugar
  • 2 tablespoons freshly squeezed lime juice

Directions

  • Step 1
    Heat the coconut oil in a large pot over medium heat. Add the onion and cook, stirring occasionally, until softened, about 5 minutes.
  • Step 2
    Add the garlic and ginger, and cook for 1 minute more.
  • Step 3
    Add the curry paste, coconut milk, bell pepper, broccoli, baby corn, green beans, snow peas, and bamboo shoots. Stir to combine and bring to a simmer.
  • Step 4
    Simmer for 10 minutes, until the vegetables are tender.
  • Step 5
    Stir in the tamari, coconut sugar, and lime juice. Taste and adjust the seasoning, if necessary.
  • Step 6
    Serve hot with cooked jasmine rice or noodles.
