Kung Pao Cauliflower

Ingredients (2 Persons)
- 3 tablespoons sesame oil
- 1 medium head of cauliflower, cut into small florets
- 1/4 cup soy sauce
- 1 teaspoon chili paste
- 2 teaspoons cornstarch
- 2 cloves garlic, minced
- 1 teaspoon minced ginger
- 1/2 cup peanuts
- 2 green onions, sliced
Directions

Step 1
Heat the sesame oil in a large skillet over medium-high heat. Add the cauliflower and cook, stirring frequently, until the cauliflower is lightly browned, about 5 minutes. Remove the cauliflower from the skillet and set aside.

In a small bowl, whisk together the soy sauce, chili paste, and cornstarch. Set aside.

Add the garlic, ginger, and peanuts to the skillet and cook, stirring frequently, for 1 minute.

Add the cauliflower back to the skillet and pour the soy sauce mixture over it. Stir until the sauce is evenly distributed and the cauliflower is well coated.

Cook for 2-3 minutes, until the sauce thickens and coats the cauliflower. Serve with sliced green onions, if desired.
