Vegan Spinach, Sweet Potato and Chickpea Curry

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons grated ginger
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Add the garlic, ginger, cumin, coriander, turmeric, cinnamon, cayenne pepper, cardamom, and cloves. Cook for 1 minute, stirring constantly.
  • Step 3
    Add the sweet potatoes to the skillet and cook for 5 minutes, stirring occasionally.
  • Step 4
    Stir in the spinach, chickpeas, and coconut milk. Bring the mixture to a simmer and cook for 15-20 minutes, stirring occasionally, until the sweet potatoes are fork tender.
  • Step 5
    Stir in the lime juice and season with salt and pepper to taste.
