Vietnamese Egg Rolls
Vietnamese egg rolls are a type of spring roll that is popular in Vietnamese cuisine. They are typically made with a combination of ground pork, mushrooms, and vermicelli noodles, wrapped in a thin egg-based wrapper and then deep-fried until golden brown and crispy. Ingredients (2 Persons)
- 1 pound ground pork
- 4 cloves garlic, minced
- 1 teaspoon freshly grated ginger
- 2 cups shredded cabbage
- 1/2 cup shredded carrots
- 1/3 cup chopped scallions
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon sugar
- 1/2 teaspoon freshly ground black pepper
- 1 package egg roll wrappers (about 40 wrappers)
Directions

Step 1
In a large skillet over medium-high heat, add the ground pork. Cook until the pork is no longer pink, about 5 minutes.

Add the garlic, ginger, cabbage, carrots, scallions, soy sauce, rice vinegar, sesame oil, sugar, and pepper to the skillet and cook for 5 minutes, stirring occasionally.

Remove the filling from the skillet and let it cool to room temperature.

To assemble the egg rolls, lay one egg roll wrapper on a work surface with one corner pointed toward you. Place 2 tablespoons of the cooled filling in the center of the wrapper. Fold the corner closest to you over the filling, tucking it underneath the filling. Fold in the two side corners and roll the wrapper away from you, tucking the edges of the wrapper underneath the roll.

Repeat with the remaining wrappers and filling.

Heat 1/2 inch of vegetable oil in a large skillet over medium-high heat. Fry the egg rolls in batches until golden brown, about 2 minutes per side. Drain on a paper towel-lined plate.
