Green Coconut Fish Curry

  • 1 pound boneless, skinless white fish (such as cod or haddock)
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons grated fresh ginger
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • 1 (14-ounce) can light coconut milk
  • 1/4 cup chopped fresh cilantro, plus more for garnish

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes.
  • Step 2
    Stir in the ginger, turmeric, cumin, coriander, and cayenne pepper and cook for 1 minute, until the spices are fragrant.
  • Step 3
    Pour in the coconut milk and bring the mixture to a simmer. Add the fish and simmer for 10 minutes, until the fish is cooked through.
  • Step 4
    Stir in the cilantro and season with salt and pepper to taste. Serve the curry garnished with additional cilantro, if desired.
