Korean-Style Spicy Pork Stew
Korean-Style Spicy Pork Stew, or “Dwaeji-gukbap”, is a popular Korean stew made with pork, vegetables, and a spicy sauce. Ingredients (2 Persons)
- 1 pound pork shoulder, cut into 2-inch cubes
- 2 tablespoons sesame oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon gochujang (Korean chili paste)
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- 2 cups beef broth
- 1/2 cup kimchi, chopped
- 1 zucchini, chopped
- 1 carrot, chopped
- 1/2 cup frozen corn
Directions

Step 1
Heat the sesame oil in a large pot over medium-high heat. Add the pork cubes and cook until browned on all sides, about 5 minutes.

Add the onion, garlic, and ginger and cook for 2 minutes, until the onion is softened.

Stir in the gochujang, soy sauce, brown sugar, black pepper, cumin, and coriander. Cook for 1 minute, until the spices are fragrant.

Add the beef broth and bring the mixture to a boil. Reduce the heat to low and simmer for 20 minutes.

Add the kimchi, zucchini, carrot, and corn to the pot and simmer for 10 minutes, until the vegetables are tender.
