Indonesian Gado-Gado

Indonesian Gado-Gado is a salad dish that is popular throughout Indonesia. It is typically made with a combination of boiled vegetables, hard boiled eggs, fried tofu, and lontong (rice cake) and is usually served with a peanut sauce dressing. This traditional dish is a favorite among many Indonesians and is a great way to enjoy a variety of fresh vegetables. Ingredients (2 Persons)

  • 2 cups long-grain white rice
  • 1/4 cup vegetable oil
  • 1/4 cup crunchy peanut butter
  • 2 tablespoons tamarind concentrate
  • 2 tablespoons palm sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground ginger
  • Pinch of salt
  • 4 cups water
  • 2 cups cooked green beans
  • 2 cups cooked potatoes, diced
  • 2 cups cooked long beans, diced
  • 2 cups cooked cabbage, chopped
  • 2 cups cooked tofu, cubed
  • 1/2 cup roasted peanuts, chopped
  • 1/2 cup fried shallots
  • 1/4 cup fried onions
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint

Directions

  • Step 1
    In a medium saucepan, heat the oil over medium-high heat. Add the garlic and cook for 1 minute.
  • Step 2
    Stir in the peanut butter, tamarind concentrate, palm sugar, coriander, cayenne pepper, turmeric, cumin, ginger, and salt. Cook for 2 minutes, stirring often, until the mixture is fragrant.
  • Step 3
    Add the water, rice, green beans, potatoes, long beans, and cabbage. Bring the mixture to a boil, then reduce the heat to low. Cover the pan and simmer for 15-20 minutes, until the rice is tender.
  • Step 4
    Remove the pan from the heat and stir in the tofu, peanuts, fried shallots, fried onions, cilantro, and mint. Serve the gado-gado warm.
