Ingredients (2 Persons)

  • 2 tablespoons vegetable oil
  • 2 tablespoons minced garlic

  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 4 cups vegetable broth
  • 1 (14 ounce) can light coconut milk
  • 2 cups uncooked thin egg noodles
  • 1 cup frozen peas
  • 1/2 cup roasted peanuts, chopped

Directions

  • Step 1
    Heat the oil in a large saucepan over medium heat. Add the garlic and onion, and cook until softened, about 5 minutes.
  • Step 2
    Stir in the turmeric, cumin, coriander, paprika, and cayenne pepper. Cook for 1 minute, until fragrant.
  • Step 3
    Pour in the vegetable broth and coconut milk. Bring to a simmer, then reduce the heat to low and simmer for 15 minutes.
  • Step 4
    Add the egg noodles and cook for 10 minutes, until tender. Stir in the frozen peas and peanuts and cook for an additional 5 minutes.
  • Step 5
    Serve hot, with extra peanuts for garnish.
