Vegan Cauliflower Curry

- 1 head of cauliflower, cut into florets
- 1 large onion, diced
- 2 tablespoons olive oil
- 2 tablespoons curry powder
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground ginger
- 1/4 teaspoon cayenne pepper
- 1 can (14.5 ounces) diced tomatoes
- 1 can (14 ounces) coconut milk
- 1 cup vegetable broth
- 1/4 cup chopped fresh cilantro
Directions

Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.

Add the curry powder, turmeric, cumin, coriander, ginger, and cayenne pepper and stir to combine. Cook for 1 minute, until the spices are fragrant.

Add the cauliflower, tomatoes, coconut milk, and vegetable broth to the skillet. Bring the mixture to a boil, then reduce the heat to low, cover the skillet, and simmer for 10 minutes, or until the cauliflower is tender.
