Yellow Curry

Yellow curry is a type of Thai curry that is milder than other types of curry. It is made from a blend of spices, including turmeric, coriander, cumin, and cardamom, which give it its yellow color. The main proteins used in yellow curry are usually chicken, beef, or shrimp, and it can also be served with vegetables. It is typically served over jasmine rice or with roti, a type of flatbread.

Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons freshly grated ginger
  • 2 tablespoons yellow curry powder
  • 2 teaspoons ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper
  • 2 carrots, peeled and chopped
  • 1 red bell pepper, chopped
  • 1 cup vegetable broth
  • 1 (14 ounce) can light coconut milk
  • 1 large sweet potato, peeled and cubed
  • 1 tablespoon brown sugar
  • 3 tablespoons freshly squeezed lime juice
  • 1/4 cup chopped fresh cilantro

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium heat. Add the onion, garlic, and ginger and cook until the onion is softened and translucent, about 5 minutes.
  • Step 2
    Stir in the curry powder, coriander, turmeric, cumin, and cayenne pepper and cook for 1 minute more.
  • Step 3
    Add the carrots, bell pepper, vegetable broth, and coconut milk and bring the mixture to a simmer. Simmer for 10 minutes.
  • Step 4
    Add the sweet potatoes and brown sugar and simmer for 10 minutes more, or until the sweet potatoes are tender.
  • Step 5
    Stir in the lime juice and cilantro, season with salt and pepper to taste, and serve.
