Thai Green Curry with Shrimp

Ingredients (2 Persons)
- 4 tablespoons olive oil
- 2 tablespoons Thai green curry paste
- 1 can (14 ounces) coconut milk
- 1/2 cup chicken broth or vegetable broth
- 1/4 cup fish sauce
- 2 tablespoons light brown sugar
- 1 1/2 pounds large shrimp, peeled and deveined
- 1 red bell pepper, thinly sliced
- 1 zucchini, diced
- 1/2 cup fresh basil leaves, torn
Directions

Step 1
Heat the olive oil in a large skillet over medium heat. Add the curry paste and cook for 1-2 minutes, stirring constantly.

Add the coconut milk, broth, fish sauce, and brown sugar to the skillet. Bring the mixture to a simmer and cook for 5 minutes.

Add the shrimp, bell pepper, and zucchini to the skillet. Cook for 5 minutes, until the shrimp are cooked through.

Stir in the basil leaves and remove the skillet from heat. Serve the curry with rice or noodles.
