Chickpea Coconut Curry

Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (14-ounce) can diced tomatoes
  • 1 (14-ounce) can light coconut milk
  • 2 (14-ounce) cans chickpeas, drained and rinsed
  • 1/2 cup frozen peas
  • Salt and pepper, to taste

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and sauté until softened, about 5 minutes.
  • Step 2
    Stir in the ginger, cumin, coriander, turmeric, cinnamon, and cayenne pepper, if using. Cook for 1-2 minutes, until the spices are fragrant.
  • Step 3
    Add the diced tomatoes, coconut milk, chickpeas, and frozen peas to the skillet and stir to combine. Bring the mixture to a simmer and cook for 10-15 minutes, until the sauce has thickened.
  • Step 4
    Taste and season with salt and pepper, as desired. Serve over cooked rice, quinoa, or your favorite grain.
