Korean Kimchi Stew

Ingredients (2 Persons)
- 3 tablespoons vegetable oil
- 1/2 cup diced onion
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1/4 cup doenjang (Korean soybean paste)
- 2 tablespoons gochujang (Korean chili paste)
- 1 cup kimchi, chopped
- 4 cups vegetable broth
- 4 cups water
- 1 cup firm tofu, cubed
- 1/2 cup mushrooms, sliced
- 1/4 cup scallions, sliced
- 1/4 cup carrots, diced
- 1 teaspoon sesame oil
- Salt and pepper, to taste
Directions

Step 1
Heat the vegetable oil in a large pot over medium-high heat. Add the onion and cook until it is softened, about 5 minutes.

Add the garlic and ginger and cook for 1 minute, stirring constantly.

Stir in the doenjang and gochujang and cook for 1 minute until fragrant.

Add the kimchi, vegetable broth, water, tofu, mushrooms, scallions, and carrots. Bring the mixture to a boil, reduce the heat to medium-low, and simmer for 10 minutes.

Stir in the sesame oil and season with salt and pepper. Simmer for an additional 5 minutes.

Serve hot with steamed rice.
