Octopus Nigiri Sushi

Octopus Nigiri Sushi is a popular Japanese dish consisting of a slice of raw octopus served on top of a small mound of vinegared sushi rice. The octopus is typically lightly seasoned with soy sauce and wasabi paste, and often garnished with a slice of pickled ginger or a sprinkle of sesame seeds. Ingredients (2 Persons)

  • 1 lb. cooked octopus, thinly sliced
  • 4 cups cooked sushi rice
  • 2 tablespoons white sugar
  • 1 teaspoon salt
  • 1/4 cup rice vinegar
  • 2 tablespoons sesame seeds

Directions

  • Step 1
    In a small bowl, combine the sugar, salt, and rice vinegar. Stir until the sugar and salt are dissolved.
  • Step 2
    Place the cooked sushi rice in a large bowl and pour the vinegar mixture over it. Gently stir the rice with a wooden spoon until all of it is coated with the vinegar mixture.
  • Step 3
    Divide the rice into 4 portions and place each portion onto a piece of plastic wrap. Use the plastic wrap to shape the rice into a rectangular shape, about 2 inches by 4 inches.
  • Step 4
    Place a slice of octopus onto each piece of rice. Sprinkle the sesame seeds over the octopus. Carefully wrap the plastic wrap around the sushi, pressing the rice and octopus together.
  • Step 5
    Carefully unwrap the plastic wrap and place the nigiri sushi onto a plate. Serve and enjoy!
