Vegetable Pad Thai

Vegetable Pad Thai is a Thai noodle dish that is made with stir-fried rice noodles and a variety of vegetables. Ingredients (2 Persons)

  • 4 ounces rice noodles
  • 2 tablespoons vegetable oil
  • 1/2 cup sliced onion
  • 1/2 cup sliced bell pepper
  • 1/2 cup sliced mushrooms
  • 1 cup small broccoli florets
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons brown sugar
  • 1 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup chopped peanuts
  • 2 tablespoons chopped fresh cilantro

Directions

  • Step 1
    Soak the rice noodles in hot water for 15 minutes. Drain and set aside.
  • Step 2
    Heat the oil in a large skillet over medium-high heat. Add the onion, bell pepper, mushrooms, and broccoli and cook until the vegetables are tender, about 8 minutes.
  • Step 3
    Add the garlic, soy sauce, rice vinegar, brown sugar, ginger, and red pepper flakes to the skillet and stir to combine. Cook for 1 minute, until the sauce is fragrant.
  • Step 4
    Add the drained noodles to the skillet and toss to coat in the sauce. Cook for 2-3 minutes, until the noodles are heated through.
  • Step 5
    Stir in the peanuts and cilantro. Serve hot.
