Tikka Masala Curry

Tikka Masala Curry is a popular Indian dish that is made with a creamy tomato-based sauce, blended with spices such as garam masala, ginger, garlic, and chili. Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tablespoons grated ginger
  • 2 tablespoons garam masala
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (14.5 ounce) can coconut milk
  • 1 pound boneless, skinless chicken thighs, cut into 1 inch cubes
  • 1/2 cup chopped fresh cilantro
  • Salt and black pepper to taste

Directions

  • Step 1
    Heat the oil in a large skillet over medium heat. Add the onion, bell pepper, garlic and ginger and cook until the vegetables are tender, about 5 minutes.
  • Step 2
    Stir in the garam masala, cumin, coriander and cayenne pepper and cook for 1 minute until fragrant.
  • Step 3
    Add the tomatoes, coconut milk and chicken and bring the mixture to a simmer. Simmer for 15-20 minutes, or until the chicken is cooked through.
  • Step 4
    Stir in the cilantro and season with salt and black pepper to taste. Serve hot with cooked rice or naan.
