Tikka Masala Curry

Ingredients (2 Persons)
- 2 tablespoons olive oil
- 1 onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 2 tablespoons grated ginger
- 2 tablespoons garam masala
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper
- 1 (14.5 ounce) can diced tomatoes
- 1 (14.5 ounce) can coconut milk
- 1 pound boneless, skinless chicken thighs, cut into 1 inch cubes
- 1/2 cup chopped fresh cilantro
- Salt and black pepper to taste

Step 1
Heat the oil in a large skillet over medium heat. Add the onion, bell pepper, garlic and ginger and cook until the vegetables are tender, about 5 minutes.

Stir in the garam masala, cumin, coriander and cayenne pepper and cook for 1 minute until fragrant.

Add the tomatoes, coconut milk and chicken and bring the mixture to a simmer. Simmer for 15-20 minutes, or until the chicken is cooked through.

Stir in the cilantro and season with salt and black pepper to taste. Serve hot with cooked rice or naan.
