Mushroom Curry

Mushroom curry is a flavorful and savory dish made with mushrooms cooked in a rich, aromatic curry sauce. The mushrooms are combined with a blend of spices, onions, garlic, ginger, and tomatoes to create a truly unique and delicious dish. It's perfect for weeknight dinners, special occasions, or just when you want something different. It can be served with rice, naan, or as a side dish.

Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 pound mushrooms, sliced
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (14 ounce) can coconut milk
  • 1/4 cup chopped fresh cilantro

Directions

  • Step 1
    Heat the oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Stir in the garlic, ginger, curry powder, cumin, turmeric, and cayenne pepper (if using). Cook for 1 minute.
  • Step 3
    Add the mushrooms to the skillet and cook until lightly browned, about 5 minutes.
  • Step 4
    Stir in the diced tomatoes and coconut milk. Bring the mixture to a simmer and cook for 10 minutes.
  • Step 5
    Stir in the cilantro and cook for 1 minute more. Serve hot over cooked rice.
