Vietnamese Baguettes

Ingredients (2 Persons)
- 1 package active dry yeast
- 1/4 cup warm water
- 1 teaspoon sugar
- 4 cups all-purpose flour
- 1 teaspoon salt
- 2 tablespoons vegetable oil
- 1 1/2 cups warm water
Directions

In a small bowl, combine the yeast, 1/4 cup warm water, and sugar. Let sit for 5 minutes, until foamy.

In a large bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture, 2 tablespoons oil, and 1 1/2 cups warm water. Stir until the dough comes together.

Turn the dough out onto a lightly floured surface and knead for 8-10 minutes, until the dough is smooth.

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let rise in a warm place for 1-2 hours, until doubled in size.

Punch down the dough and divide into 4 pieces. Roll each piece into a log about 8 inches long. Place the logs on a greased baking sheet, cover with a damp cloth, and let rise for 30 minutes.

Preheat the oven to 375°F. Bake the baguettes for 25-30 minutes, until golden brown.
