Indonesian Satay

Indonesian Satay is a popular dish of skewered and grilled meats, usually served with spicy sauces. It is believed to have originated in the Indonesian archipelago and is now popular in many Southeast Asian countries. Satay consists of small pieces of meat, usually chicken, beef, mutton, or pork, that are marinated in a mixture of seasonings and then grilled or barbecued over an open flame. The skewers are served with a spicy peanut sauce and sometimes pickles, onions, and cucumbers. Satay is often served as an appetizer or snack, but it can also be a main course.

Ingredients (2 Persons)

  • 1 pound chicken, cut into cubes
  • 1/3 cup coconut milk
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Directions

  • Step 1
    In a medium bowl, combine the coconut milk, soy sauce, brown sugar, garlic, coriander, cumin, turmeric, ginger, black pepper, and red pepper flakes (if using). Mix until well combined.
  • Step 2
    Add the chicken cubes to the bowl and stir to coat them with the marinade. Cover the bowl with plastic wrap and refrigerate for at least 1 hour.
  • Step 3
    Preheat a grill or grill pan over medium-high heat. Thread the chicken cubes onto skewers and grill for 4-5 minutes per side, or until the chicken is cooked through.
  • Step 4
    Serve the satay with a dipping sauce of your choice, such as peanut sauce or sweet chili sauce.
