Thai-Style Fried Rice with Shrimp

Ingredients (2 Persons)

  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup frozen peas and carrots
  • 2 cups cooked white rice
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1/2 pound peeled and deveined shrimp
  • 3 scallions, chopped

Directions

  • Step 1
    Heat the oil in a large skillet over medium-high heat. Add the garlic, ginger, and red pepper flakes and cook for 1 minute.
  • Step 2
    Add the frozen peas and carrots and cook for another 3-4 minutes until the vegetables are tender.
  • Step 3
    Stir in the cooked rice and cook for 3 minutes, stirring occasionally.
  • Step 4
    Stir in the soy sauce, fish sauce, and shrimp. Cook for 5 minutes, stirring occasionally, until the shrimp are cooked through.
  • Step 5
    Garnish with the scallions and serve hot.
