Thai Peanut Chicken Noodles

Ingredients (2 Persons)

  • 2 pounds boneless skinless chicken breasts, cut into cubes
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1/4 cup creamy peanut butter
  • 2 tablespoons honey
  • 1 tablespoon freshly grated ginger
  • 1 teaspoon sesame oil
  • 1/4 teaspoon red pepper flakes (optional)
  • 8 ounces linguine noodles, cooked according to package directions

Directions

  • Step 1
    Heat a large skillet over medium-high heat. Add the olive oil and chicken and cook until the chicken is cooked through, about 5 minutes.
  • Step 2
    Add the garlic and cook for 1 minute, stirring constantly.
  • Step 3
    In a small bowl, whisk together the soy sauce, peanut butter, honey, ginger, sesame oil, and red pepper flakes (if using). Pour the mixture into the skillet and stir to combine.
  • Step 4
    Reduce the heat to low and simmer for 5 minutes, stirring occasionally, until the sauce has thickened.
  • Step 5
    Add the cooked noodles to the skillet and toss to combine. Serve warm.
