Vietnamese Banh Mi Sandwich

Ingredients (2 Persons)
- 1/2 pound cooked pork, thinly sliced
- 4 French-style rolls
- 1/4 cup mayonnaise
- 2 carrots, grated
- 1/2 cucumber, sliced
- 1/4 cup pickled daikon radish
- 1/4 cup fresh cilantro, chopped
- 1 jalapeno, thinly sliced (optional)
Directions

Step 1
Spread a thin layer of mayonnaise on each side of the French rolls.

Layer the pork, carrots, cucumber, daikon radish, cilantro, and jalapeno (if using) on the bottom halves of the rolls.

Place the top halves of the rolls on top of the filling and press down gently.

Cut the sandwiches in half and serve.
