Mixed Vegetable Curry

Mixed Vegetable Curry is a flavorful and healthy dish. It is typically made with a variety of vegetables, such as potatoes, carrots, cauliflower, peas, and green beans. Ingredients (2 Persons)

  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons grated ginger
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper (optional)
  • 2 carrots, diced
  • 2 potatoes, peeled and diced
  • 1 bell pepper, diced
  • 1 cup frozen peas
  • 1 cup vegetable broth
  • 1 (14 ounce) can coconut milk
  • 1 tablespoon brown sugar
  • Salt and pepper to taste

Directions

  • Step 1
    Heat the oil in a large skillet over medium heat. Add the onion, garlic, and ginger and cook until the onion is softened and translucent, about 5 minutes.
  • Step 2
    Stir in the curry powder, cumin, coriander, turmeric, and cayenne pepper (if using). Cook for 1-2 minutes, until the spices are fragrant.
  • Step 3
    Add the carrots, potatoes, bell pepper, and frozen peas to the skillet. Pour in the vegetable broth and coconut milk and stir to combine.
  • Step 4
    Bring the mixture to a simmer and cook for 10-15 minutes, until the vegetables are tender. Stir in the brown sugar and season with salt and pepper to taste.
