Mango Chicken Curry

Mango Chicken Curry is a flavorful Indian dish that combines the sweetness of ripe mangoes with the spice of curry. The chicken is cooked in a sauce of spices, onion, garlic, ginger, tomato, and, of course, mango. Depending on the recipe, the curry can be mild or spicy, and is served over rice or with naan bread. Ingredients (2 Persons)

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 2 cups chicken broth
  • 2 boneless, skinless chicken breasts, cubed
  • 1 (15-ounce) can coconut milk
  • 2 mangoes, peeled and diced
  • 1/4 cup fresh cilantro, chopped

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook until fragrant, about 5 minutes.
  • Step 2
    Stir in the curry powder, turmeric, cumin, ginger, cinnamon, and cayenne pepper. Cook for 1-2 minutes, until the spices are fragrant.
  • Step 3
    Add the chicken broth and chicken and bring the mixture to a simmer. Simmer for 5-10 minutes, until the chicken is cooked through.
  • Step 4
    Stir in the coconut milk, mangoes, and cilantro. Cook for 5 minutes, until the sauce has thickened.
