Vegetarian Sushi Rice Balls

Vegetarian sushi rice balls, also known as "onigiri" or "omusubi", are a popular snack in Japan. Ingredients (2 Persons)

  • 2 cups cooked short grain sushi rice
  • 2 tablespoons sushi vinegar
  • 1/4 cup toasted sesame seeds
  • 1/2 cucumber, diced
  • 2 avocados, diced
  • 1/2 cup pickled carrots, diced
  • 1/4 cup pickled ginger, diced
  • 1/4 cup nori, finely chopped

Directions

  • Step 1
    Combine the cooked sushi rice and sushi vinegar in a large bowl and mix until evenly combined.
  • Step 2
    Divide the rice into 4 equal portions and shape into balls.
  • Step 3
    Roll the sushi rice balls in the toasted sesame seeds until evenly coated.
  • Step 4
    In a separate bowl, combine the cucumber, avocado, carrots, ginger, and nori.
  • Step 5
    Divide the mixture into 4 equal portions and stuff each portion into one of the sushi rice balls.
  • Step 6
    Serve the sushi rice balls immediately or store in the refrigerator for up to two days.
