Filipino Lumpia

Ingredients (2 Persons)
- 8 ounces ground pork
- 4 ounces shrimp, chopped
- 1/4 cup carrots, diced
- 1/4 cup onion, diced
- 1/4 cup celery, diced
- 1/4 teaspoon garlic powder
- 1/4 teaspoon ground black pepper
- 2 tablespoons soy sauce
- 1/4 cup green onions, chopped
- 1/4 cup cilantro, chopped
- 1/4 cup bamboo shoots, diced
- 1/4 cup water chestnuts, diced
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 2 tablespoons cornstarch
- 1/4 cup vegetable oil
- 1 (16-ounce) package lumpia wrappers

Step 1
In a large bowl, combine pork, shrimp, carrots, onion, celery, garlic powder, ground black pepper, soy sauce, green onions, cilantro, bamboo shoots, water chestnuts, salt, sugar, and cornstarch. Mix together until evenly combined.

Heat a large skillet over medium-high heat and add the vegetable oil. Fry the lumpia wrappers in batches until golden brown, about 1-2 minutes per side.

Remove the wrappers from the skillet and let them drain on a paper towel-lined plate.

Fill the wrappers with the pork and vegetable mixture, folding the edges to seal. Place the filled lumpia on a lined baking sheet and bake for 15-20 minutes, or until the filling is cooked through.
