Japanese Egg Custard

Ingredients (2 Persons)

  • 4 large eggs
  • 2 cups dashi (Japanese soup stock)
  • 2 tablespoons mirin (sweet Japanese cooking wine)
  • 1/2 teaspoon salt
  • 5 ounces silken tofu, cut into small cubes

Directions

  • Step 1
    Preheat oven to 350°F (175°C).
  • Step 2
    In a medium bowl, beat the eggs with a whisk until blended.
  • Step 3
    Add the dashi, mirin, and salt to the eggs and mix until combined.
  • Step 4
    Strain the mixture through a fine mesh sieve into a large bowl.
  • Step 5
    Divide the tofu among four oven-safe ramekins.
  • Step 6
    Pour the egg mixture into the ramekins, filling each one about 3/4 full.
  • Step 7
    Place the ramekins in a baking dish and pour hot water into the dish until it reaches about halfway up the sides of the ramekins.
  • Step 8
    Bake the custards for 20-25 minutes, or until the custards are set and a toothpick inserted into the center comes out clean.
