Ingredients (2 Persons)

  • 4 tablespoons vegetable oil
  • 2 onions, diced
  • 4 boneless, skinless chicken breasts, cut into cubes
  • 3 cloves garlic, minced
  • 2 tablespoons grated fresh ginger
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon cayenne pepper
  • 1 (14.5 ounce) can diced tomatoes
  • 1 cup chicken broth
  • 1/2 cup plain yogurt

Directions

  • Step 1
    Heat the oil in a large skillet over medium-high heat. Add the onions and cook until softened, about 5 minutes.
  • Step 2
    Add the chicken and cook until no longer pink, about 8 minutes. Add the garlic, ginger, turmeric, cumin, coriander, cardamom, and cayenne pepper, stirring to combine.
  • Step 3
    Stir in the diced tomatoes and chicken broth. Reduce heat to low and simmer, stirring occasionally, for 10 minutes.
  • Step 4
    Stir in the yogurt and cook for an additional 5 minutes. Serve over cooked rice.
