Vegetarian Sushi Donut is a unique and delicious Japanese dish, created by combining traditional sushi ingredients with the flavor of a donut. The dish consists of a light and fluffy donut, topped with a variety of vegetarian-friendly sushi fillings. These delicious toppings can include avocado, cucumber, pickled ginger, carrots, and even tofu. Vegetarian Sushi Donut can be served as an appetizer, snack, or even an entrée. It is an inventive way to enjoy the flavors of sushi without the use of fish, making it an ideal choice for vegetarian diners.

Ingredients (2 Persons)

  • 2 cups short-grain sushi rice
  • 3 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/2 avocado, thinly sliced
  • 1/2 cucumber, thinly sliced
  • 1/4 cup pickled ginger
  • 1/4 cup pickled radish
  • 2 tablespoons sesame seeds
  • 1 sheet nori, cut into strips

Directions

  • Step 1
Rinse the sushi rice in a strainer until the water runs clear. Place the rinsed rice in a medium pot and add 2 cups of water. Bring the water to a boil, then reduce the heat to low, cover, and cook for 15 minutes. Remove the pot from the heat and let the rice steam, covered, for 10 minutes.
  • Step 2
In a small bowl, whisk together the rice vinegar, sugar, and salt. Pour the mixture over the cooked rice and gently fold it in with a wooden spoon. Set aside to cool.
  • Step 3
Fill a medium pot with 2 inches of water and bring it to a boil. Reduce the heat to low and place a bamboo steamer basket over the top. Place the sushi donut mold in the steamer basket and fill it with the cooled sushi rice. Cover the basket and steam for 10 minutes.
  • Step 4
Carefully remove the mold from the steamer basket and invert it onto a plate. Gently press the sushi donut out of the mold. Arrange the avocado, cucumber, pickled ginger, and pickled radish on top of the sushi donut. Sprinkle with sesame seeds and nori strips.
