Sweet-and-Sour Pork

Ingredients (2 Persons)

  • 2 pounds boneless pork loin, cut into 1-inch cubes
  • 1/4 cup vegetable oil
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 (8 ounce) can pineapple chunks, drained
  • 1/2 cup apple cider vinegar
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 2 tablespoons ketchup

Directions

  • Step 1
    Heat the oil in a large skillet over medium-high heat. Place the pork cubes in a large resealable bag. Add the flour, salt, and pepper to the bag and shake to coat the pork.
  • Step 2
    Add the pork to the skillet and cook until lightly browned, about 5 minutes. Add the onion and bell pepper and cook until the vegetables are tender, about 5 minutes.
  • Step 3
    Pour in the pineapple chunks, vinegar, brown sugar, soy sauce, and ketchup. Stir to combine, then reduce the heat to low and simmer until the pork is cooked through and the sauce has thickened, about 20 minutes.
