Ebi Nigiri Sushi

Ebi Nigiri Sushi is a type of sushi that features cooked shrimp as the main ingredient. The shrimp is usually marinated in a mixture of soy sauce, sake, and mirin, then grilled and served atop a bed of vinegared sushi rice. Ingredients (2 Persons)

  • 4 cups cooked Japanese-style sushi rice
  • 1/2 cup sushi vinegar
  • 12-16 large cooked shrimp, peeled and deveined
  • Nori strips, cut into thin strips (optional)

Directions

  • Step 1
    In a large bowl, combine the cooked sushi rice and sushi vinegar, stirring until evenly combined.
  • Step 2
    Divide the sushi rice into 4 servings. Divide the cooked shrimp into 4 servings.
  • Step 3
    To assemble each nigiri sushi, take one portion of the sushi rice and one portion of the cooked shrimp. Shape the sushi rice into a small oval and place it on top of the cooked shrimp. If desired, wrap a thin strip of nori around the outside.
  • Step 4
    Repeat with the remaining ingredients to make 4 pieces of nigiri sushi.
