Ingredients (2 Persons)
- 2 tablespoons coconut oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons freshly grated ginger
- 2 teaspoons ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon turmeric
- 1/4 teaspoon ground cardamom
- 1/2 teaspoon ground cinnamon
- 2 tablespoons tomato paste
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1 large papaya, peeled, seeded, and cut into 1-inch cubes
- 1 can (14.5 ounces) diced tomatoes
- 1 can (14.5 ounces) coconut milk
- 1/4 cup chopped fresh cilantro
- 2 tablespoons freshly squeezed lime juice
Directions

Step 1
Heat the coconut oil in a large skillet over medium heat. Add the onion and garlic and cook, stirring frequently, until the onion is soft and translucent, about 5 minutes.

Add the ginger, coriander, cumin, turmeric, cardamom, and cinnamon and cook for 1 minute, stirring constantly.

Stir in the tomato paste, salt, and pepper.

Add the papaya cubes and tomatoes and cook for 5 minutes.

Stir in the coconut milk and bring to a simmer. Reduce the heat to low and simmer for 15 minutes, stirring occasionally.
