Thai Coconut Soup
Thai Coconut Soup is a popular Thai soup dish that is made with a broth of coconut milk, galangal, lemongrass, kaffir lime leaves, and chilies. Ingredients (2 Persons)
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, diced
- 1 red bell pepper, diced
- 1 teaspoon grated ginger
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon dried basil
- 1/4 teaspoon cayenne pepper
- 4 cups vegetable broth
- 1 can (14.5 ounces) diced tomatoes
- 1 can (14 ounces) coconut milk
- 2 tablespoons freshly squeezed lime juice
- 2 tablespoons chopped fresh cilantro
- Salt and freshly ground black pepper, to taste
Directions

Step 1
Heat the oil in a large pot over medium heat. Add the onion, garlic, carrots, celery, bell pepper, ginger, turmeric, cumin, coriander, basil and cayenne pepper and cook, stirring, until the vegetables are tender, about 5 minutes.

Add the broth, tomatoes and coconut milk and bring to a boil. Reduce heat and simmer for 15 minutes.

Stir in the lime juice and cilantro. Add salt and pepper to taste.

Serve hot.
