Spicy Tofu and Rice Bowls

Spicy Tofu and Rice Bowls are a delicious and nutritious meal. This vegan-friendly dish is perfect for a quick and easy dinner or lunch. Ingredients (2 Persons)

  • 1 block extra-firm tofu, drained and cut into cubes
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • 4 cloves garlic, minced
  • 1/4 cup vegetable broth
  • 1/2 teaspoon Sriracha, or more, to taste
  • 2 cups cooked brown rice
  • 2 tablespoons chopped fresh cilantro leaves

Directions

  • Step 1
    Heat olive oil in a large skillet over medium heat. Add tofu, chili powder, cumin, garlic powder, onion powder, smoked paprika, oregano, thyme and season with salt and pepper, to taste.
  • Step 2
    Add garlic and cook, stirring frequently, until fragrant, about 1-2 minutes. Stir in vegetable broth and Sriracha and bring to a simmer.
  • Step 3
    Reduce heat to low and simmer until liquid is reduced and tofu is cooked through, about 5 minutes.
  • Step 4
    Serve immediately over cooked brown rice, garnished with cilantro, if desired.
