Vegetable Spring Rolls

Vegetable Spring Rolls are a popular snack dish in many Asian countries. They are typically made with a variety of vegetables such as cabbage, carrots, and mushrooms, which are wrapped in a thin egg or wheat-based wrapper. They are often served as an appetizer or side dish, and can be served either fried or fresh. Vegetable Spring Rolls are a great way to add a healthy, flavorful twist to any meal.

Ingredients (2 Persons)

  • 1 medium cucumber, julienned
  • 1 large carrot, julienned
  • 1 red bell pepper, julienned
  • 1/2 cup shredded cabbage
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped mint
  • 1 package round rice paper wrappers

Directions

  • Step 1
    Fill a large bowl with hot water and place a plate on top of the bowl.
  • Step 2
    Dip one rice paper wrapper in the hot water and place it on the plate. Let it sit for 15-20 seconds until it’s soft.
  • Step 3
    Lay the softened wrapper on a cutting board and place a few pieces of cucumber, carrot, bell pepper, cabbage, cilantro, and mint in the center.
  • Step 4
    Fold the wrapper up like a burrito and tuck in the sides. Place the spring roll on a plate and cover with a damp paper towel to keep it from drying out.
  • Step 5
    Repeat with the remaining ingredients. Serve with your favorite dipping sauce.
