Easy Coconut Curry

Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • 4 cups vegetable broth
  • 1 (14-ounce) can coconut milk
  • 1 (14-ounce) can diced tomatoes
  • 2 cups cooked chickpeas
  • 1 cup frozen peas
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • Salt and pepper, to taste

Directions

  • Step 1
    Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  • Step 2
    Stir in the ginger, curry powder, cumin, coriander, turmeric, and cayenne pepper and cook for 1 minute.
  • Step 3
    Add the vegetable broth, coconut milk, and diced tomatoes and bring to a simmer. Cook for 10 minutes.
  • Step 4
    Add the chickpeas, peas, cilantro, and parsley and cook for an additional 5 minutes. Season with salt and pepper, to taste.
  • Step 5
    Serve over cooked rice or quinoa.
